Instructions: Cut the meat into strips and weigh. Calculate the spice required at 45 g per Kg meat. If desired, add vinegar or Worcester sauce at 50-100 g per Kg meat. Mix the meat and the spice well, cover and refrigerate overnight. Hang to dry.
